Occupational Cancer Research Centre (OCRC) - Food Safety Culture: When Food Safety Systems are Not Enough
Food Safety Culture remains a concept that is challenging to assess and improve in real-life situations. To address this knowledge gap, a study was initiated to develop a tool that could be used to assess the different components of food safety culture in order to identify points for improvement. The survey was developed based on questions that assessed the different components of food safety culture (compliance, leadership, calculativeness and belief). Verification of the findings was performed through inspections based on Public Health Inspectorate guidelines. The survey was successful in identifying areas of improvement and there was strong correlation with the findings on the visual inspection of the establishments. Moreover, there is a need to verify that on-site inspections provide a representative assessment of day-to-day practices/culture of the facility. This approach (along with others) to assess food safety culture will be discussed.
Presenter: Dr. Keith Warriner
Dr. Keith Warriner is currently an Associate Professor within the Department of Food Science at University of Guelph, Canada. Dr. Warriner received his BSc in Food Science from the University of Nottingham, UK and PhD in Microbial Physiology from the University College of Wales Aberystwyth, UK. He later went on to work on biosensors within the University of Manchester, UK and subsequently returned to the University of Nottingham to become a Research Fellow in Food Microbiology. He joined the Faculty of the University of Guelph in 2002. Research has focused across the food chain from on-farm interventions through to food safety culture in food service establishments. Dr. Warriner is frequently called upon to give media interviews on food safety issues and has appeared on several episodes of CBC Marketplace.
